Westminster History
The Barber family have been hand-crafting authentic English cheddar cheese at Maryland Farm in Ditcheat, Somerset. Just 11 miles from Cheddar village itself – since way back in 1833, it makes them the oldest cheese making family in England and one of the oldest cheddar producers in the world!
From the very beginning of their journey, the milk which came from the Barber family’s herd of cows – which are free to roam, graze and relax on natural, rich and lush pasture, as nature intended – was sold to locals, while the cheese was used to feed the family and dedicated farmworkers.
As time went by, the Barber family needed more milk in order to meet the demand for their mouth-watering cheddar cheese so they began to buy extra supplies of milk from neighbouring farms around the area, and still do so to this day.
The farm is still owned and run by the Barber family, now in its sixth generation. They currently look after 2,000 cows that produce milk for the dairy and graze over 2,500 acres of land.
Traditional and authentic cheese crafting techniques are continuously embraced on the farm, and combined with a unique collection of traditional starter cultures.
The Heler Farm
In the heart of the beautiful Cheshire countryside lies Laurels Farm, the Heler family dairy.
A 300-strong herd of award-winning cows, known collectively as the Helton herd, are based at the family’s Parkes Farm in Audlem, located just a few miles away from the dairy, and are pampered to ensure the highest quality of milk.
The Heler family’s herd each have their own names, are given mattresses to sleep on, have their hooves manicured and even have music to listen to!
And in order to create our mouth-watering Westminster Vintage, non-GMO Sharp, and Smoked Cheddar, the Heler family not only use milk from their own farm but source quality milk from over a hundred specially selected farms – much of which are located on the natural pasture rich Cheshire Plain.
